I promised more recipes from our National Day Party. Ideally I would share them all with you, but unfortunately I don’t remember who cooked what.
One dish in particular though was absolutely delicious. Not that I haven’t eaten rice before. But this rice dish was unforgettable. Fluffy, flavoured, colorful rice. Really, the best (exotic) rice I’ve ever had. Which is why I made sure to get the recipe and share it with you. The last in the series of 21 July party dishes. Rice Pulau. (Pulau means island in Indonesian, so I assume there are more recipes than one for rice pulau).
I don’t have the measurements as such, but think lots of rice for lots of people. A dish for a party. I am not sure if you can freeze the rice when done, but I think you should be able to. (Any tips on this?)
Onions, olive oil, tomatoes, carrots, green peas, cinnamon, cardamon, turmeric, cloves, cashews, basmati rice, stock (cubes). Pour some olive oil in a deep pan, and fry the onions till soft and yellow. Add the tomatoes, the carrots, green peas, spices, and stock and stir for 5 min. Add 1 portion basmati rice to 2 portions water. Cover the pan with a lid and let it all simmer on low heat for half an hour. Or till done. Probably best served with chicken or fish.
Up for the challenge? I know it is all a little shall we say, ‘artistic’, but the rice was delicious. Once I have cooked the rice at home as well, I will adapt the measurements accordingly. Promise.
